| The
Head Chef
In Germany when you come across a
high-class, very cosy and individually furnished restaurant, you will
usually see the sign The chef cooks the food here himselfcc, and if
there is a large plaque on the building announcing chaine des
rôtisseurs you can be sure of excellent food. Whether it be the
world-famous French cuisine or the Viennese food our head chef is quite
at home. In larger restaurants the various chefs who are specialists in
their own fields like the saucier, rôtisseur, gardemanger, poissonnier,
entremetier, pâtisseur etc. are all subordinate to him. All of them
know how to prepare tasty, wholesome and nutritionally-balanced meals.
The chef cooks the meals himself guarantees that you will enjoy your
meal. Roasting, stewing, baking, steaming, blanching, mixing, seasoning
— all this forms the fine art of cookery which embraces the experience
and recipes of many years. It’s also worth studying grandmother’s
cookery book. Perhaps you have your head chef at home also? Well, then
enjoy your meal! — and it’s such a pity that the German cookery
museum in Frankfurt (Main) with exhibits, a library, teaching aids and a
collection of menus was destroyed in the 2nd world war. In spite of that
the food in Germany is firstrate! |
